Welcome to my life, Instant Pot Shredded Chicken. I finally took the plunge and cooked meat in the Instant Pot. Guess what? It was awesome! Hands down I will make this part of my weekly routine. I only made two chicken breasts in the Instant Pot, but you could definitely make more! Once it’s cooked, shred with two forks (or a hand beater!).

We’ve eaten this salad for dinner the past two nights – it’s that good! For Christmas, my husband got a rotisserie attachment for our grill…now literally everything I eat comes off the rotisserie (only a slight exaggeration).

We’re hosting friends the first few weeks in January & my husbands birthday is early January too! We do plan on eating mostly paleo until our Whole 30 starts. After all the holiday sweets & delicious drinks, I am ready for some clean, whole food. No more sugar!
Ah, healthy soups – I love them! I love that they make the entire house smell good for hours (and taste delicious)! This Swiss Chard and Lentil soup is really easy to make, the hardest thing is chopping all the veggies. And, yes, it’s meatless but filling so you will not be hungry an hour after dinner.
