Ah, this Tomato Cucumber Salad with Fresh Mozzarella is like a bite of summer in the middle of winter! I made this for a Christmas party last week. When we arrived, I put the salad next to the other salads and when I came back to dress it before dinner, it was half gone! I’d like to introduce Curry Roasted Cauliflower. Curry roasted anything is delicious. It just adds so much flavor! This side is whole 30 compliant, paleo friendly, and delicious! Cauliflower is a great low-carb option. It pairs well with just about everything – curry, cheese, other veggies, meat, and tacos! If you think cauliflower is bland, think again – it’s really all about the seasoning! Cauliflower is versatile, embrace it!

Christmas is officially 6 days away! December is flying – literally. Yesterday I planned my Christmas dinner menu which you can read about here. I need dessert suggestions, so please let me know if you have any! These roasted brussel sprouts with cranberries and bacon WILL be making a Christmas dinner appearance! Anything with bacon is generally a hit, so may as well sneak some greens in with the bacon.
This is the first year that we’re hosting Christmas and I am beyond excited! It’s time to bring out all the wedding registry items that I haven’t used yet! And, full disclosure, I may have ordered some new tabletop decor just for this occasion.
