Chocolate Coffee Protein Muffins for the WIN! These are SO good! In order to get the perfect recipe for you guys, I actually made them about fives times… which means I ate five batches. And guess what? I am not even sick of them!
These Chocolate Coffee Protein Muffins are the perfect compliment to breakfast, a mid-day snack, or dessert. They’re a tad sweet from the maple syrup and banana. I’m not even going to get into what protein power you should use… I typically put collagen peptides in my coffee every morning but past that I don’t typically consume more protein in the form of powder on a daily basis.
I do have some old whey chocolate protein powder, which is what I used in this recipe. This recipe would still work with one of the paleo protein powders – feel free to use what suits you! I will also note that protein powder, when used in baking, can sometimes create a really dry consistency but the banana really helps to combat this especially when stored in an air tight container.
Anyways, way too much discussion about protein and protein powders – lets get to enjoying a Chocolate Coffee Protein Muffin!
Chocolate Coffee Protein Muffins - Perfect breakfast muffin, mid-day snack or dessert. Comes together in 25 minutes. No refined sugar or flour.
- 1 & 1/4 cup chocolate protein powder
- 1 cup almond flour
- 1 tbsp unsweeted cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 banana, mashed
- 1/4 cup maple syrup
- 1 egg
- 2 tbsp melted coconut oil
- 1/2 tsp vanilla extract
- 1 shot of espresso

Preheat oven to 350 degrees F. Combine dry ingredients in a bowl and mix well

In a separate bowl, mash banana. Then add remaining wet ingredients. Pour wet mixture into dry mixture slowly and whisk until combined

Using the 1/4 measuring cup, split mixture between 12-muffin silicon muffin tin. Cook for 15 minutes or until cooked through. Remove from oven, let cool & enjoy!
