I’m back with Creamy Watermelon Chia Seed Pudding! This ‘pudding’ is the perfect healthy snack or breakfast! It’s also Paleo, Vegan and Whole30 Compliant.
Full disclosure: I’ve been making watermelon everything! It’s so good this time of year & I cannot get enough of it. Watermelon slushies, creamy watermelon chia seed pudding (duh!), watermelon juice, watermelon popsicles and watermelon mint salad. I’ve also been using the rinds as much as possible so I’m wasting very little. Did you know the rinds are edible? I didn’t until recently but they actually taste really similar to watermelon and it’s particularly good in blended recipes.
As you may or may not have noticed, I took almost a month break from the blog. My day job has been really time consuming. Okay, I also may have taken a beach vaca in there too! Actually, still on the beach vaca right now (hello, Florida) – but, I’m back. I’m ready to take on summer in the kitchen (& outside). I do have several trips coming up for work and personal but that is how it goes. My goal is to get you valuable content. Over this blog break I realized how much I do enjoy the blog. It gives me something to look forward too, a creative outlet. And with that, I’ll end the sappy-ness and get to the eating. Cheers to this Creamy Watermelon Chia Seed Pudding, happy summer!
This ‘pudding’ is the perfect healthy summer snack or great for breakfast! It’s also Paleo, Vegan and Whole30 Compliant!
- 2 cups cubed watermelon
- 1/2 cup nut milk of choice [I used coconut almond milk]
- 1 tbsp lemon juice
- 1 tbsp maple syrup [optional]
- 1/3 cup + 1 TBSP chia seeds
- fresh fruit, for topping [optional]
Blend watermelon, nut milk & lemon juice until smooth and put mixture into glass container. Add chia, put lid on and shake vigorously. Refrigerate overnight. When ready, serve, top & enjoy!
