Anyone else a total nut lover? I specifically love cashews and other nuts, but cashews first. I could eat them raw, salted, curry roasted and every combination in between. I made these Curry Roasted Cashews on a Saturday and they were gone by Tuesday!
It’s so easy to come downstairs and grab a handful, before you know it, they’re gone! So… I would recommend portioning out once they cool to stop over consumption. Enjoy!
Curry Roasted Cashews - a delicious, perfect snack! A little bit sweet with a hint of curry. Paleo, Dairy-Free and Gluten-Free!
- 2 tbsp coconut oil
- 1 tbsp honey
- 1 tsp curry powder
- 1/4 tsp cayenne pepper
- 3 cups raw cashews
- salt flakes
Preheat oven to 350 degrees F.
In a small sauce pan, melt coconut over low heat. When melted, add honey and stir rapidly for 10 seconds. Turn off burner (keep pan on hot burner) and continue stirring until well mixed
Remove from heat, add cashews and stir. Add spices and stir until cashews are well coated
Spread evenly on a lined baking sheet with no overlapping and cook for 25- 30 minutes. Remove from oven, sprinkle with salt flakes and let cool - serve & enjoy!
