Easy Instant Pot Baby Potatoes

Easy Instant Pot Baby Potatoes – if you’re a fellow potato lover, this recipe is perfect for you! The potatoes saute for 5 minutes, cook for 7 minutes in the Instant Pot and then it’s finished! The perfect side or bowl base is ready to be topped and consumed!

I know many of you received an Instant Pot for Christmas because they were backordered on Amazon. If you still need one, I use this one. I’m still slightly afraid of cooking meat in the instant pot still… BUT today is the day. I’m going to make chicken breasts in the instant pot tonight. I’d like to make an entire series of Whole 30, Paleo approved meals that you can just throw into the Instant Pot when you come home from work! Definitely stay tuned for that!


Easy Instant Pot Baby Potatoes
Ingredients
  • 1 tsp extra virgin olive oil [EVOO]
  • 1.5 lbs baby potatoes [24 oz]
  • 1 tbsp italian seasoning
  • 1/3 cup water
Instructions
  1. Turn on the IP Saute function (after you hit saute, you’ll see ‘on’, this means it’s heating up). Add EVOO into Instant Pot

  2. When the display reads ‘hot’ (Instant Pot fully heated), add potatoes and set a timer for 5 minutes occasionally stirring the potatoes [Note: I’ve made this recipe without actually stirring at all and it turns out fine though stirring is best practice.]

  3. When the timer is done, cancel Saute. Add water and italian seasoning 

  4. Place lid on Instant Pot, make sure it’s properly sealed and add 7 minutes on the manual setting

  5. When it’s complete, wait for the Instant Pot to completely depressurize naturally (approximately 15-20 minutes). Open, fluff and serve!

    1. Yes! I could easily make these in 4 lb increments, haha! It would be: 2.6 tsp EVOO, 4 LBS potatoes, 2.6 tbsp italian seasoning and ~3/4 cup water. Let me know how it goes!

  2. Question – do you put a steaming insert for this recipe? Or just let the potatoes be on the bottom of the IP

    1. I do not use the steaming insert for this recipe. After sautéing, I let the potatoes be at the bottom of the IP. I hope this helps & you enjoy them as much as I do!
