Easy Instant Pot Quinoa

The Instant Pot makes this recipe really easy, no watching the stove or cleaning up a mess when the pot boils over. I usually make a cup of quinoa at a time and keep it in the fridge for easy, quick meals. My dad gave me an Instant Pot as a housewarming gift when we moved to Reno and I’ll admit I was skeptical. I thought anything made in an instant pot could be made in a slow cooker, so why would you need both? WRONG. I will admit I think all kitchen appliances are necessary, even if they do serve a limited function. 

The Instant Pot is fast, quick, and easy. It’s also cheap – about $85 on Amazon. I’ve just started to explore the endless food options. I figure once I’ve mastered the simple recipes (oats, quinoa, etc.) I’ll move onto meat. I’ve read even frozen meat can go into the Instant Pot… we’ll see about that.

This recipe is how to make quinoa in the Instant Pot; here are some ideas of what you can do with the cooked quinoa:

  • Add a few tablespoons to any salad
  • Add to scrambled eggs with veggies
  • Use as a bowl base [quinoa, protein, veggies, sauce]
  • Add to chili/soup [Note: add only to portions you plan on eating to avoid mush]

Easy Instant Pot Quinoa

Easy Instant Pot Quinoa - Only 1 minute!

Ingredients
  • 1 cup quinoa
  • 2 cups water or broth (plus a little bit of extra)
Instructions
  1. Turn on the IP Saute function (after you hit saute, you’ll see ‘on’, this means it’s heating up).  Add quinoa into Instant Pot

  2. When the display reads ‘hot’ (Instant Pot fully heated), set a timer for 5 minutes and occasionally stir the quinoa [Note: I’ve made this recipe without actually stirring at all and it turns out fine though stirring is best practice.]

  3. When the timer is done, cancel Saute and add water/broth plus a little extra liquid, a tablespoon or two

  4. Place lid on Instant Pot, make sure it’s properly sealed and add 1 minute on the manual setting

  5. When it’s complete, wait for the Instant Pot to completely depressurize (approximately 15-20 minutes). Open, fluff and serve!
