Welcome to my life, Instant Pot Shredded Chicken. I finally took the plunge and cooked meat in the Instant Pot. Guess what? It was awesome! Hands down I will make this part of my weekly routine. I only made two chicken breasts in the Instant Pot, but you could definitely make more! Once it’s cooked, shred with two forks (or a hand beater!).
A few ideas for what to do with shredded chicken:
- add to a salad for extra protein
- make a bowl with shredded chicken & other veggies
- wrap it up in lettuce (tacos)
- add to a meat sauce
The options are endless. I purposefully did not add spices to this recipe which makes it completely customizable to whatever you’re making! [Note: this recipe is whole 30 and paleo friendly!] I’m working on fast, easy dinner recipes that use shredded chicken (one coming tomorrow!). In the meantime, if you need ideas, contact me! Cheers!
Chicken in the Instant Pot - perfect for shredding and using for meal prep! Whole 30 & Paleo!
- 1 tsp avocado oil
- 2 chicken breasts [approximately 1 lb 3oz]
- 1/4 cup chicken stock
- 1/4 cup water

Place oil, chicken, stock and water into Instant Pot. Place lid on Instant Pot, make sure it’s properly sealed and add 5 minutes on the manual setting

When it’s complete, wait for the Instant Pot to depressurize naturally for 10 minutes. Release remaining pressure. Open and shred!
