Work has been so busy lately, it’s been really nice to have cooked food already in the fridge. It can be tempting to make poor food decisions when there is not easy food ready to be heated up.

I’m sure everyone can relate to this – get home from work late, open the fridge and it’s all things that take 1+ hour to cook. What doesn’t take 1+ hour? Oatmeal? Eggs (which you’ve already eaten breakfast and lunch!)? Takeout only takes 20 minutes and minimal effort. I’m right there with you! After a long day it’s hard to keep up the willpower. This is why meal prep is essential to healthy eating & this Mexican Cauliflower Rice should make it slightly easier! Enjoy!
