Make this Mexican Cauliflower Rice and eat all week! Pair with Instant Pot Shredded Chicken or Green Chile Chicken & some roasted veggies – perfection! If you don’t have cooked protein around, consider adding an over-easy egg. [Okay, fine, this will also work with other cooked egg options, scrambled, poached etc.] Even though the title is ‘Mexican’ this cauliflower rice, this ‘rice’ can be used in all different scenarios – it’s versatile!

Mexican Cauliflower Rice - Whole30, Paleo, Dairy Free, & Gluten Free. Perfect for meal prep - create a power bowl instantly, just add protein and veggies!

Ingredients
  • 1 tbsp avocado oil
  • 2 cloves of garlic, minced
  • 1 small yellow onion, chopped finely
  • 6 oz tomato paste
  • salt and pepper, to taste
  • 6 cups cauliflower rice
  • 1/2 cup chicken stock
Instructions
  1. Heat a non-stick pan on medium high heat. Add oil. When oil is hot, add garlic and cook until garlic is fragrant 

  2. Add onion, cook for 5 minutes. Add tomato paste, salt and pepper, and cauliflower rice. Mix well - don't worry too much if there are a few clumps of tomato paste after mixing. Add chicken stock, cover and cook for 10 minutes. Serve or portion out for meal prep!
