Simple Roasted Asparagus – sometimes simple is better. This recipe is only 4 ingredients and takes 15 minutes to come together.
It’s officially asparagus season & April is the prime month for asparagus – YESSS! I happen to love these little green stalks. I tend to buy organic by default but it’s not necessary, asparagus on the EWG’s Clean 15 list of veggies that don’t necessarily need to be bought organic.
The other night we cooked asparagus on the grill and it came out SO delicious. I starting thinking about why and figured out it was because the grill was so hot (500 degrees, to be exact). Then I thought, why can’t I do that in the oven too? Turn out, you can! Hence why the recipe temp is 500 degrees. [NOTE: parchment paper usually goes to 420 or 425, so if you want to line your pan, consider using foil). Cheers!
Simple Roasted Asparagus - the perfect spring side dish! Only takes 15 to make & bake. As always, whole 30 approved, paleo friendly, dairy-free & gluten-free.
- 1 lb asparagus, ends trimmed
- 1 tsp extra-virgin olive oil [EVOO]
- salt, to taste
- 1/2 lemon, juiced [optional]
Preheat oven to 500 degrees F. Trim asparagus ends. In a large bowl, mix EVOO, asparagus and salt together
Place asparagus on baking sheet, in a single layer. Cook for 8-10 minutes. Remove from oven, sprinkle with lemon juice, serve & enjoy!
