Spinach Artichoke Chicken Salad with Bacon – can you really go wrong adding bacon?

This Spinach Artichoke Chicken Salad with Bacon is Whole30 compliant, paleo friendly and perfect for meal prep! It just reminds me of summer, which is always a good thing. [Note: just make sure your artichokes are marinated in a compliant oil] But seriously, who doesn’t love the combination of spinach and artichokes – hello spinach artichoke dip? This salad is cleaned up with no cheese or ingredients you can’t pronounce. Win!

A few additional topping ideas I had to add to this salad:

  • avocado (duh)
  • sunflower seeds
  • tomato
  • slices almonds
  • soaked goji berries

I’m off the Palm Springs this weekend for Julia’s bachelorette! I’m so excited. Although, I did notice that when I was trying on clothes to pack, they were a little tight. So I’m going to have to fix that before summer is full blown (ie ASAP). I have the eating aspect dialed in. What I need to do is adjust my workouts. I started thinking back to when I was working out for our wedding (and when I was my smallest) – I hardly did any cardio and mostly lifted. Recently, I’ve been focusing on cardio (biking and walking). Morale of the story – add in more weights. Here is to continuing to eat right with this chicken salad – Cheers!


Spinach Artichoke Chicken Salad with Bacon

Spinach Artichoke Chicken Salad with Bacon - this Whole 30 compliant and paleo friendly salad is perfect for meal prepping & also for dinner. 

Ingredients
  • 1 lb chicken tenderloins, cooked & chopped
  • 4 slices cooked bacon, chopped
  • 1 cup marinated artichoke hearts, chopped
  • 4 celery stalks, chopped
  • 1 tbsp mayo
  • 1/2 tsp garlic powder
  • 1/4 cup chopped red onions
  • 2 cups chopped spinach
  • salt & pepper, to taste
  • 1/2 tsp red pepper flakes [optional]
  • squeeze of lime juice [optional]
  • mixed greens (to serve over) [optional]
Instructions
  1. Combine all ingredients and mix well. Serve over mixed greens (if desired) & enjoy!
