Tomato Cucumber Salad with Fresh Mozzarella

Ah, this Tomato Cucumber Salad with Fresh Mozzarella is like a bite of summer in the middle of winter! I made this for a Christmas party last week. When we arrived, I put the salad next to the other salads and when I came back to dress it before dinner, it was half gone! Seems like some people thought it was an appetizer – at least I know people liked it. And that just goes to show you don’t even really need the dressing.

Generally, eating is season is the best approach to good tasting vegetables (DUH!). If your cherry tomatoes need some flavor, add salt! Avocado would also make a great addition to this salad too, just cut & add before serving. Cheers to some summer mid-winter!


Tomato Cucumber Salad with Fresh Mozzarella
Ingredients
Salad
  • 1 cucumber, chopped
  • 2 cups red cherry tomatos, cut in half
  • 1 cup fresh ciliegine mozzarella, cut in half
  • 1 handful fresh basil, chopped
Dressing
  • 1 tbsp extra virgin olive oil
  • 1 tsp lemon juice
  • 1 tsp balsamic vinegar
  • 1/2 tsp dried parsley
  • 1/3 tsp honey
  • Salt & Pepper, to taste
Instructions
  1. Combine tomato, cucumber, mozzarella, and basil in a serving bowl

  2. Put all dressing ingredients into a small bowl, mix well. Pour over salad and toss. Serve & enjoy!

Recipe Notes

If you're making this salad ahead of time, wait to dress until it's serving time. Also, pour out some of the tomato water prior to dressing.
