Paleo Shrimp Bites with Creamy Avocado Aioli

Paleo Shrimp Bites with Creamy Avocado Aioli - the perfect crowd pleaser appetizer. Comes together quickly (20 minutes) and is Whole30, Paleo, Dairy- Free & Gluten-Free!

Ingredients

Creamy Avocado Aioli

  • 1 small ripe avocado
  • 1 clove garlic
  • Juice from 1/2 lime
  • 1 tbsp mayo
  • 1/4 cup fresh cilantro, rinsed
  • salt, to taste

Shrimp Bites

  • 1 lb 60/90 raw shrimp, peeled and deveined
  • 1 tbsp avocado oil
  • 1 tsp coriander
  • 1 tsp cumin
  • 1 tsp dry mustard
  • 1/2 tsp chili powder
  • 2 bags sweet potato/root vegetable chips [6oz/bag]
  • fresh cilantro [optional garnish]
  • salt, to taste

Instructions

Creamy Avocado Aioli

  1. Combine all ingredients in a food processor and blend until smooth

Shrimp Bites

  1. Rinse clean shrimp and dry. Add spices and mix until shrimp are well coated. In a large non-stick pan, heat avocado oil over high heat

  2. When oil is hot, add shrimp to the pan, ensuring there is one level of shrimp (no overlap). Cook 2 minutes per side (4 minutes total). Add a little bit of extra time if needed to cook shrimp fully. Be careful not to over cook the shrimp. Remove from heat and put shrimp onto separate plate to cool

  3. Lay out chips onto a platter, add a leaf of cilantro (if using). Place one or two shrimp onto each chip, depending how large each chip is. Add dollop of creamy avocado aioli using two spoons. Sprinkle with fresh cilantro and salt - serve & enjoy!

Recipe Notes

Usually the chips come in 6 oz bags. The recipe recommends getting two bags (12oz total) as some of the chips within each bag are broken. Two bags ensures you will have enough chips! Be mindful of the oil used!
