Ground Turkey Taco Meat with Toasted Pine Nuts

Ground Turkey Taco Meat with Toasted Pine Nuts - This EASY & QUICK meal comes together perfectly (and it's also perfect for meal prep!) and it Whole 30 Compliant and Paleo Friendly!

Ingredients

  • 1/3 cup pine nuts
  • 1 tbsp extra-virgin olive oil [EVOO]
  • 1 onion, chopped
  • 1 jalapeƱo pepper, chopped
  • 1 fresno pepper, chopped
  • 1 lb ground turkey meat
  • 1 tsp garlic powder
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp red pepper flakes
  • salt & pepper, to taste
  • 2 tsp tomato paste

Instructions

  1. Heat a small pan over medium-low heat and add pine nuts. Stir frequently until golden in spots, about 3 minutes. Remove from heat and set aside

  2. In a large saute or cast iron pan, heat EVOO over medium high heat. Add onion and jalapeƱos. Cook & stir mixture frequently for 10 minutes or until onions are soft. Remove from pan and set aside 

  3. Add turkey to same skillet and add seasonings (including salt & pepper). Cook for about 10 minutes and break up large chunks while stirring. Once cooked, add onion mixture back into pan, then add tomato paste. Mix well an reduce to low heat. Cook for another 5 minutes. Serve in tortillas or lettuce wraps and top with toasted pine nuts - enjoy!

Recipe Notes

If meal prepping, consider keeping pine nuts separate and add just prior to eating so they don't get soggy.
