Make the lavender honey simple syrup first. Bring 1 cup water and 1 tablespoon of lavender flowers to a boil
Add 1/2 cup honey and stir until dissolved. Reduce the heat and simmer for 10 minutes
Taste test to see if more lavender is needed, add more if desired. Simmer another 5 minutes. Strain into a jar and set aside to let cool
Once lavender syrup is cool, muddle blueberries and lavender simple syrup until all blueberries are squished and liquid starts to turn dark blue
Fill shaker with ice and shake: muddled blueberries and lavender syrup, pom juice, bourbon, orange juice
Split shaken mixture between two glasses and top with sparkling wine. [Note: pour sparkling wine slowly so glass does not overflow with foam] Serve & enjoy!
