Sparkling Blueberry Lavender Mash with Bourbon

THIS SPARKLING BLUEBERRY LAVENDER MASH WITH BOURBON IS SO, SO GOOD. Okay, I got too excited. I need to be excited because this is the last drink of 2017. Can you believe it? Where did 2017 go?

I’ve been on quite the drink-making spree lately. While it’s been fun, the consumption of not-perfect drinks has been quite high and I’m definitely ready for it to slow down. I remade this Sparking Blueberry Lavender Mash with Bourbon at least 3 times before I decided on the proportions. Thankfully my husband consumes most of the rejects.

Before you read down and freak out that I included simple syrup, you should know that this simple syrup is made with honey! This recipe does not use all the lavender honey simple syrup made below. So, if you like sweeter drinks, add more. If you have leftovers, add it to ice cream, waffles, pancakes, or pair with almond butter. It can be used in the place of honey!

Lavender is supposed to provide stress relief. Mix it with a drink and it’s the perfect way to bring in the next year – with less stress and great taste! Cheers!


Sparkling Blueberry Lavender Mash with Bourbon
Servings: 2 drinks
Ingredients
Lavender Honey Simple Syrup
  • 1 cup water
  • 1 tbsp dried lavender flowers
  • 1/2 cup honey
Sparkling Blueberry Lavender Mash with Bourbon
  • 2 tbsp lavender honey simple syrup
  • Handful of fresh blueberries [about 1/3 cup]
  • 2 tsp pom juice
  • 2 oz bourbon
  • juice from one small orange [approximately 3 tbsp]
  • sparkling wine
Instructions
Lavender Syrup
  1. Make the lavender honey simple syrup first. Bring 1 cup water and 1 tablespoon of lavender flowers to a boil

  2. Add 1/2 cup honey and stir until dissolved. Reduce the heat and simmer for 10 minutes

  3. Taste test to see if more lavender is needed, add more if desired. Simmer another 5 minutes. Strain into a jar and set aside to let cool

Sparkling Blueberry Lavender Mash with Bourbon
  1. Once lavender syrup is cool, muddle blueberries and lavender simple syrup until all blueberries are squished and liquid starts to turn dark blue

  2. Fill shaker with ice and shake: muddled blueberries and lavender syrup, pom juice, bourbon, orange juice

  3. Split shaken mixture between two glasses and top with sparkling wine. [Note: pour sparkling wine slowly so glass does not overflow with foam] Serve & enjoy!
