In a small bowl, whisk together sauce ingredients and set aside. Clean the chicken and pat dry. Cut into thirds, so each piece gives you 3 pieces. In a large saute pan, heat avocado oil over medium heat
Once oil is hot, add green onions. Cook for 3 minutes. Add chicken, cook for 2 minutes. Add sauce and broccoli, cover with a lid and cook another 5 minutes. Add carrots and cook covered another 2 minutes. Remove lid & Check your chicken! If done, add cashews and cook another 30 seconds. Turn off heat, garnish, serve & enjoy!
I like hot food, therefore, I like everything in my food to be hot, including cashews. Feel free to add cashews after chicken is done cooking if you want them to be crispier!
