Paleo Broccoli Cashew Chicken

Paleo Broccoli Cashew Chicken - Whole 30 compliant, Paleo Friendly, Dairy-free & Gluten-free. This dish is a clean twist on classic asian. It comes together quickly and is perfect for a weeknight meal!

Ingredients
  • 1 tbsp avocado oil
  • 1 bunch green onions, chopped
  • 1 lb chicken tenders, cut into thirds
  • 4 cups broccoli florets [10 oz]
  • 1/2 cup shredded carrots
  • 1 cup Sunshine Cashews [Roasted with a Sprinkling of Salt]
Sauce
  • 1 tsp garlic powder [or 1 fresh garlic clove, minced]
  • 1/2 tsp red curry paste
  • 1/2 inch fresh ginger, grated [less if you're not a big fan of ginger]
  • 2 tbsp coconut aminos
  • 4 tbsp chicken bone broth [1/4 cup]
  • 2 tbsp orange juice
Instructions
  1. In a small bowl, whisk together sauce ingredients and set aside. Clean the chicken and pat dry. Cut into thirds, so each piece gives you 3 pieces. In a large saute pan, heat avocado oil over medium heat

  2. Once oil is hot, add green onions. Cook for 3 minutes. Add chicken, cook for 2 minutes. Add sauce and broccoli, cover with a lid and cook another 5 minutes. Add carrots and cook covered another 2 minutes. Remove lid & Check your chicken! If done, add cashews and cook another 30 seconds. Turn off heat, garnish, serve & enjoy!

Recipe Notes

I like hot food, therefore, I like everything in my food to be hot, including cashews. Feel free to add cashews after chicken is done cooking if you want them to be crispier!
