Creamy Chia Seed pudding

Creamy Watermelon Chia Seed Pudding

This ‘pudding’ is the perfect healthy summer snack or great for breakfast! It’s also Paleo, Vegan and Whole30 Compliant!


  • 2 cups cubed watermelon
  • 1/2 cup nut milk of choice [I used coconut almond milk]
  • 1 tbsp lemon juice
  • 1 tbsp maple syrup [optional]
  • 1/3 cup + 1 TBSP chia seeds
  • fresh fruit, for topping [optional]


  1. Blend watermelon, nut milk & lemon juice until smooth and put mixture into glass container. Add chia, put lid on and shake vigorously. Refrigerate overnight. When ready, serve, top & enjoy!
