Heat a non-stick pan on medium high heat. Add oil. When oil is hot, add garlic and cook until garlic is fragrant
Add onion, cook for 5 minutes. Add tomato paste, salt and pepper, and cauliflower rice. Mix well - don't worry too much if there are a few clumps of tomato paste after mixing. Add chicken stock, cover and cook for 10 minutes. Serve or portion out for meal prep!
