Welcome to my life, Instant Pot Shredded Chicken. I finally took the plunge and cooked meat in the Instant Pot. Guess what? It was awesome! Hands down I will make this part of my weekly routine. I only made two chicken breasts in the Instant Pot, but you could definitely make more! Once it’s cooked, shred with two forks (or a hand beater!).
Easy Instant Pot Baby Potatoes – if you’re a fellow potato lover, this recipe is perfect for you! The potatoes saute for 5 minutes, cook for 7 minutes in the Instant Pot and then it’s finished! The perfect side or bowl base is ready to be topped and consumed!
Tri-tip Spinach Salad with Primal Kitchen Green Goddess Dressing – whole 30, paleo, dairy and gluten free – the perfect dinner salad! We’ve eaten this salad for dinner the past two nights – it’s that good! For Christmas, my husband got a rotisserie attachment for our grill…now literally everything I eat comes off the rotisserie (only a slight exaggeration).
Garlic Roasted Broccoli – YUM! This recipe is easy (as most of mine are) and only 3 ingredients. I made this in the morning and used it as a base for a breakfast bowl with over-easy eggs. Who says you can’t eat broccoli for breakfast? Actually, don’t answer that.
JANUARY IS HERE! Who is doing January Whole 30? [Don’t miss these Greek Spaghetti Squash Boats!!] We have decided to start our January Whole 30 on January 15th. We’re hosting friends the first few weeks in January & my husbands birthday is early January too! We do plan on eating mostly paleo until our Whole 30 starts. After all the holiday sweets & delicious drinks, I am ready for some clean, whole food. No more sugar!
