Easy Instant Pot Tomato Soup – delicious & easy soup using canned tomatoes, an Instant Pot and a blender! It’s Whole 30 approved, paleo friendly & vegan too!

The first time I made this soup my husband said, “Umm, this tastes like marinara.” While I’m not opposed to eating tomato soup that tastes like marinara, I knew the recipe needed improvement. A few cans of crushed tomatoes later, it’s perfect!

I work from home and so that means I eat lunch at home. Everyday. When chicken over sweet potatoes gets old, I try to switch it up with simple soups. The Kettle and Fire Tomato Soup is excellent but is basically the cost of eating out ($7+). I started thinking that I could probably make this soup for a lot cheaper, enter, this Easy Instant Pot Tomato Soup.

This recipe is meant to be easy, just throw the ingredients in, set the Instant Pot & come back just before you’re ready to eat. Easy Instant Pot Tomato Soup – delicious & easy soup using canned tomatoes, an Instant Pot and a blender! It’s Whole 30 approved, paleo friendly & vegan too!

Ingredients
  • 1 28oz can whole crushed tomatoes, with juice
  • 2 tbsp tomato paste
  • 1 shallot bulb [or 1/8 small onion]
  • 4 fresh basil leaves
  • 2 tsp minced garlic
  • 2 tbsp italian seasoning
  • 1 cup beef bone broth
  • 2 tsp coconut aminos
  • salt & pepper, to taste
  • 5.4 oz can, coconut cream
  • fresh basil [optional topping]
  • coconut milk [optional topping]
Instructions
  1. Combine crushed tomatoes, tomato paste, shallot (or onion), fresh basil, garlic, seasoning, bone broth, coconut aminos, salt & pepper into the Instant Pot.

  2. Place lid on Instant Pot, make sure it’s properly sealed, and add 20 minutes on the manual setting. When it’s complete, wait for the Instant Pot to depressurize naturally.  

  3. Open the Instant Pot and add coconut cream and additional salt, if necessary. Then using an immersion blender or a large blender, blend until smooth. (The entire soup fit in my Vitamix) When ready to eat, if desired, top with toppings of choice, serve & enjoy!

Recipe Notes

Pro tip: For a smoother consistency, blend in high-powered blender.
