Paleo Sweet Potato Waffles – I’ve been waiting to share this recipe with you all week!
I was skeptical about making waffles out of sweet potato but it works. And, not only that, it’s also really delicious. We were on Whole 30 when I made these so we did not eat them with maple syrup (which I don’t even like, but still, just saying) and it did not seem like something was missing. (Yes, I know waffles are a no-no on Whole 30 BUT I had scheduled these for the blog and the ingredients are compliant, so there you have it)
I topped with coyo (coconut yogurt) & fresh berries! A few ideas additional ideas for toppings are: almond butter & chia, chia jam and cashew cheese with honey.

Paleo Sweet Potato Waffles - a healthy twist on a classic breakfast! These waffles are quick and easy (only 5 ingredients)!
- 1 medium grated sweet potato [3-3.5 cups]
- 3 eggs
- 2 tbsp coconut flour
- 2 tbsp ground flax seed
- salt, to taste
- oil of choice, for greasing

Combine all ingredients in a medium mixing bowl and mix until well combined. Begin heating waffle maker

Once waffle maker is hot, grease well. Using a 1/4 cup, scoop mixture and spread out evenly on the waffle maker. Cook until potato are cooked through (takes a little longer than regular waffles). Repeat until batter is gone. Serve, top & enjoy!
