Green Detox Soup – YUM! This soup is light, delicious and a perfect side to add more veggies into your day! It’s also paleo friendly and whole 30 compliant!
I made this Green Detox Soup first thing in the morning because I had some extra time (I know, who actually has extra time in the mornings?). I took my photos and had the great idea of adding over-easy eggs on top of this soup for breakfast! I quickly cooked up some eggs and tossed them on top of this Green Detox Soup. That is what I call – breakfast done right.
This Green Detox Soup is packed with veggies & protein (from the chicken bone broth)! Serve as a side, topped with nuts and chia. For more protein, consider adding other seeds (think pumpkin or sunflower). Enjoy!
Green Detox Soup - super easy & loaded with veggies! Whole 30, Paleo, Dairy Free and Gluten Free!
- 1 tbsp avocado oil
- 1/2 yellow onion, chopped
- 2 cups cauliflower rice
- 1 lb green beans, trimmed
- 2 cups broccoli florets
- 2 cups chicken bone broth
- 2 cups water
- 4 stalks celery, chopped
- 1 bunch fresh parsley
- 1 cup spinach
- salt, to taste
- toasted chopped nuts & chia seeds [optional garnish]

In a large soup pot, heat oil over medium heat. Once oil is hot, add onions and cook until soft and brown (approximately 5 mins)

Reduce heat to medium-low. Add cauliflower rice, green beans, broccoli, chicken bone broth and water. Cook for 25 minutes. Check to see if veggies are cooked; if not, cook another 5 minutes, repeat until veggies are cooked through

Add celery, parsley and spinach. Cook an additional 5 minutes.

Using an immersion blender, blend soup until smooth. Taste and add desired amount of salt. Serve in bowls, garnish with toasted nuts & chia seeds - enjoy!
To make this soup fully vegetarian, substitute vegetable broth or water for the chicken bone broth.
If you don't have an immersion blender, blend in a high powered blender until smooth!
