Instant Pot Paleo Oatmeal – this is a creamy & easy alternative to traditional oats. These paleo oats take less than 5 minutes to prepare and are SUPER delicious!
Umm, is it Spring yet? It was snowing this morning and today it’s been cold and rainy. But it is also kind of hailing now too! AH! I thought after it snowed last weekend that we were done with the snow? I guess not. I’m still plugging along with the warm recipes so I don’t have to wear my down jacket around all the time in the house. My husband doesn’t let me turn up the heat in the house so I have to keep warm somehow.
This Instant Pot Paleo ‘Oatmeal’ is the perfect addition to file away for those cold mornings when oatmeal just isn’t going to cut it. [See my original Instant Pot Steel-Cut Oatmeal recipe here.] My mom and dad both tell the story about when I was little I would eat HUGE bowls of oatmeal, cooked or dry. I absolutely love it, but I’ve figured out that, for me, oatmeal is best in small doses (and I never want to eat a small dose!). So this Instant Pot Paleo Oatmeal has been making lots of appearances in our house for that reason! I hope you enjoy this as much as I do! Cheers!
Instant Pot Paleo 'Oatmeal' - this creamy & easy hot breakfast is a perfect alternative to traditional oatmeal. It's made even easier by using the Instant Pot!
- 1/2 cup cashews
- 1/2 cup almonds
- 1/2 cup shredded coconut
- 1/2 tsp cinnamon
- salt, to taste
- 1.5 cups nut milk of choice [I used cashew]
- goji berries
- coconut flakes
- chia seeds
- fresh fruit
- hemp seeds

Place cashews and almonds in a food processor or blender and pulse until crumbly. Put mixture into Instant Pot and add coconut, cinnamon, salt, water and milk

Place lid on Instant Pot, make sure it’s properly sealed, and add 4 minutes on the manual setting. When it’s complete, wait for the Instant Pot to depressurize naturally. Open, add extra water/almond milk, if desired, top with toppings of choice, serve & enjoy!
