Ground beef & spinach meatballs – meatballs are a staple in our household & this is a personal fave! They’re the perfect protein to keep in the fridge and use to top salads, throw into bowls or eat as a snack.

I subscribe to Butcherbox (grass-fed beef right to your door!). With the Buterbox I subscribe to, I don’t get a choice in the cuts of meats that come in my box. The last few times have included ground beef and now I have about 8 1lb ground beef bricks in my freezer, whoops! More ground beef recipes coming your way!

The last Whole30 I completed I had every meal planned, down to a snack for each day. This Whole30 I decided to meal prep a bunch of food in large batches and deal with it day-by-day, to give myself options. So far, it’s worked out. This week I am going to adjust and try to make individual meals already prepped, that way I make a decision and the entire meal is already put together. What meal preps tips to you have? Ground Beef & Spinach Meatballs

Beef & Spinach Meatballs - Whole 30 Approved, Paleo friendly, Dairy-free & gluten-free! Perfect for meal prep or to keep in the fridge for easy protein. 

Ingredients
  • 1.3 lbs ground beef
  • 1 lbs frozen spinach dethawed and drained [16 oz]
  • 2 tbsp nutritional yeast flakes
  • 1/2 tsp paprika
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp chili powder
  • 1/8 tsp cumin
  • 2 eggs
  • salt and pepper, to taste
Instructions
  1. Preheat oven to 400 degrees. In a large mixing bowl, combine all ingredients and mix well.

  2. Using a 1/4 cup, scoop out mixture and make meatballs. Place meatballs onto lined baked sheet with rack. Cook 20-25 or until cooked through. Serve & enjoy or cool for meal prep!
